I skipped over to July in The Dumpling: A Seasonal Guide to make Banana Cupcakes (Apam Misang). I didn't add the nuts or coconut, because I didn't have any coconut and toasting nuts seemed like too much trouble, so I guess these were the simplest form. Also, the recipe says it'll make 8 and I only made 5, though I'm pretty sure the muffin cups I used are standard sized. Even so, delish, will make again. Pretty easy and straightforward, the only difficulty was that I still haven't found my pot with the steam insert, which the recipe calls for, so I used a bamboo steamer. Which worked fine, but getting the batter-filled cups into the steamer without spillage was dicey where using the steamer insert would have been simple.

I find this to be the case with muffins almost all the time. Who is measuring them? Are they using tiny tiny muffin pans? Because I almost always need to double up a recipe if I want to fill my tins.

I don't know! I don't think there's any difference, really. I guess it's all eat a muffin whitey hairsplitting!
