I looked it up and apparently the singular is gnocco. There's probably some interesting history behind us mostly knowing the potato kind. My mother never made gnocchi, because her mother actively disliked them, so they're all pretty new to me.
I bet you could make these gnocchi with whatever flour you wanted, if you had breadcrumbs made from that type of bread. Probably best to try the recipe as written first, though, get a feel for how the dough is supposed to turn out.
