We keep cheap supermarket instant coffee on hand for just such occasions. As there is Only One True Vanilla (Breyers Natural) in our house, it gets tasked with topping pie, bottoming preserves and/or syrup, and getting ExtraVeryStrong--syrupy--instant coffee drizzled over it (the liquid freezes into crackles around the edges if you do it right!) and a finishing fillip pinch of dry coffee powder sprinkled over.
Caveat: do not consume a minimum of two hours before bedtime.
