I understand that there are people out there for whom baking is an exacting science, full of striving for te flakiest of pie crusts and the airiest of . . . whatever is supposed to be airy. As you  might guess from my inability to finish that sentence, I am not that kid of baker. I throw things together in a  slapdash fashion and generally end up with something edible.

Edible outcome = win.

This morning, muffins came up on the tyranny of sourdough starter schedule. I lost half the egg or so to an inability to crack the shell effectively - it was impressive in its incompetence, but made the dog happy. Of course, from then on I had the dog underfoot hoping I'd drop more eggs. The scale shut itself off while I was in the midst of measuring the starter, so hard to say how much actually got added. I probably should have cut the baking powder in half, considering the reduction in other ingredients, but I didn't. Dried cherries need finishing off, so in they go. Overmix the batter, spoon it into silicone muffin cups that I wish were standard-sized but are not and wedge them into the toaster oven. At least I didn't drop any during that whole process.

Half an hour later, muffins! Win.

It's strange - muffins are basically the same recipe as pancakes, and I end up with about the same number of muffins as pancakes per batch, yet all the pancakes get eaten as soon as they're cooked, while the muffins last me several days. [Heh. Not today. All et up]

I love the title to your post! Hee.

I never thought about pancakes and muffins being the same thing, but they really are. It is a conundrum when it comes to quantities, isn't it? I will happily sit down and demolish a stack of four pancakes, but would be aghast at the thought of eating four muffins in a row. I may have to re-evaluate my attitude towards muffins. Especially blueberry muffins, I loves them, I does.

You are an evil wench! You have left me with the overwhelming desire for maple-bacon muffins and nothing even close to that being anywhere near me! And the deli in the residence hall next door is closed between semesters. I can't even get an egg mcmuffin style thingie from them to substitute. EVOL!
